Cruise the Sample Menu

When you’re aboard Morris Nauticals’ vessels, your crew caters just for you. From daily activities and destinations, to breakfast, lunch and dinner, customisation starts before you board.

First things first, you’ll fill out the Personalise Your Charter form prior to embarkment. Are you looking for a new adventure each day? Are you more focused on turning on relaxation mode? Perhaps you’re celebrating a special occasion? Or ticking something off the bucket list? Everything from board game favourites, music, mealtimes and snack preferences, are outlined on this handy checklist that helps the crew curate the perfect charter for you. Don’t forget the all important caviar order!

From there, the crew handle the rest. Let’s take a sneak peek at a few sample menus – highlights of what you might enjoy aboard the Morris Nautical vessels.

Cruise the Sample Menu

Day One

Upon boarding either the M.Y. Beluga or M.Y. Flying Fish superyachts, perhaps with a champagne for your private sail away party,  dive straight into lunch; a cold seafood platter with smoked salmon, bugs, prawns, oysters and mussels. Add bug and prawn sliders, plus a garden salad, and you certainly won’t go hungry. Head out on the kayaks for a paddle to work up an appetite for dinner, or grab your favourite book and enjoy the sea breeze. The evening meal kicks off with crab cake served with mango avocado salsa, perhaps with a glass of Shaw & Smith Sauvignon Blanc, before switching to a Vasse Felix Filius Margaret River Cabernet to pair nicely with pan-seared eye fillet steak, potato gratin, asparagus and red wine jus. End the evening with a burnt cheesecake with caramelised apple.

Day Two

Early birds can dive straight into Danish pastries and sliced fruit with sunrise, or linger longer in bed and fuel up for the day with a hearty brunch – the eggs benedict with ham or salmon are cooked to order so they’ll be ready when you are. Snorkelling, kayaking or fishing will keep you busy between meals. Then it’s time for lunch, which might be Asian favourites like spring rolls, or dumplings, or on another day, Greek salad chicken wraps and beef kebabs. Dinner starts with crumbed scallops and beetroot puree, that begs for a crisp glass of Kooyong Clonale Chardonnay. Save room for pan-seared lamb loin, with roasted potato and mushroom sauce and a suitable red wine. And then there’s dessert. You won’t want to skip a white chocolate brûlée with carmelised bananas.

Day Three

Start the day with croissants and French toast, if you’ve a sweet tooth, or opt for a classic fried egg breakfast. Maybe it’s time to break out the board games, or it’s back into the ocean to explore more of the Great Barrier Reef. The Morris Nautical vessels can take you to some of the famed Ribbon Reef dive spots that are difficult to access unless you’ve got the crew and the time to get there. Back aboard, it’s time for a seafood dinner. Prawns, bugs, Kilpatrick oysters, scallops and fish are on the menu, alongside grilled vegetables, roasted potatoes and salads. You might be on your second seafood dinner of the trip, tucking into oven-baked barramundi with vegetable caponata that won’t disappoint. Neither will a moreish passionfruit cheesecake served with caramelised mango.

Whether you’re on board to chill out or take every day as a big adventure on the Great Barrier Reef, the crew will ensure your time aboard any of the Morris Nautical vessels is just right for you.
